Cork ring glue

No problem with wood glue. Many use Titebond II or III for the cork rings. I happen to use Gorilla Glue, gluing the rings directly on my (bamboo) blank and turning the grip on the blank. Epoxy is a good choice to glue a pre-shaped grip to a blank.

I use TB-II or TB-III, depending on which is handy, to assemble the grip. Wood glues hold cork together admirably well. For installing on the rod, that depends on the blank. When I'm building bamboo rods, I use wood glue there too. For graphite rods, though epoxy is pretty much a requirement.
My lathe doesn't have a through bore in the headstock or tailstock, so I can't turn grips on the blank.
